Recipe - 2 Ingredient, Guilt-free Pancakes



Yes, 2 ingredients. Just 2 ingredients, to make some super healthy and tasty pancakes. You're probably thinking, "what is she going on about", or "that's impossible", well let me show you.

These pancakes are low calorie (only 22 cals per pancake), high in protein, gluten free and dairy free - what more could you want?!

These are the 2 ingredients:


Yes, just banana and eggs. No flour or anything. You've probably heard about this recipe before, but here's my take on the 2 ingredient pancake.

Ingredients

- One large banana
- Two Medium Sized Eggs
- Baking Powder (optional but I recommend it)

Method

Place a frying pan on the hob and turn it to a medium heat.

Begin by mashing the banana in a bowl, it's going to look gross but you've got to do it.


Once mushed, carefully crack in the two eggs and mix together. Be careful when mixing because you don't want it to turn out like scrambled eggs which taste of banana and then leave me a nasty comment - no one wants that.


Sprinkle in a pinch of baking powder, this is optional but I recommend it.

If the mixture is still a bit lumpy (it most probably is), use an electric hand held blender to turn the mixture into a thick, smooth consistency.



The pan should be hot enough by now, drizzle on a small amount of oil (1 cal spray is ideal) and pour in 1/4 of your mixture - roughly the same size as a CD.



After 30 seconds, use a spatula to flip it over to the other side which shouldn't take as long.

As you can see, I burnt the first one but you know what they say, practice makes perfect...


Repeat until you have run out of mixture.

Neatly arrange your pancakes on a plate and decorate accordingly. I've decide to sprinkle over some blueberries but maple syrup works well too!



Now sit back and tuck into your guilt-free pancakes.
